As the sun rises over Santa Monica, casting golden rays across the waves, I find myself reflecting on the subtle changes that each season brings. My name is Marie Espino, and as a caterer, I am often reminded of how nature's rhythms influence the culinary creations I bring to life. My culinary approach shifts accordingly. I embrace the season’s bounty, featuring ripe tomatoes, juicy peaches, and fresh herbs in my dishes. It’s during these sun-kissed months, with warm breezes carrying the scent of the ocean, that I relish creating flavorful skewers and refreshing gazpachos. My clients often ask for finger foods that embody the carefree spirit of summer, and I’m always happy to oblige, crafting bites that showcase the vibrant flavors of the season.

Then comes autumn—a magical period filled with warm hues and cozy gatherings. As the air cools, my menus evolve to reflect this nurturing shift. The crispness of apples, the richness of pumpkins, and the heartiness of root vegetables find their way onto my platters. Cooking becomes an act of love, as I prepare roasted butternut squash soups and spiced apple cider drinks, perfect for intimate gatherings around a fire. Finally, winter arrives, draping Santa Monica in a softer light. Although the temperatures in Southern California may not drop significantly, there’s a certain stillness that blankets the beach. My catering transforms into a feast of warmth and indulgence. Hearty dishes take center stage as people yearn for comfort during the holiday season. Think savory stews, rich chestnut purees, and decadent desserts that feature warm spices. It’s a celebratory time, filled with reflections of the year past and the promises of the new one to come. Each gathering becomes a heartfelt experience, where food not only nourishes the body but also the soul.

In this ever-evolving journey as a caterer, I’ve learned to listen to the whispers of the seasons.
